Black Bean Burgers & Quiche Lorraine

I LOVE LOVE LOVE these recipes from one of our Mama Birth readers.  Black beans and rice is actually a huge hit in our house and we have them about once a week so I love this idea to make them into burgers.  And quiche- that is one of my favorite things of all time.

Here are a few recipes I have found work well to feed everyone in our family at all stages (my kids are 2 ½ and 6 now, and are more receptive to both these recipes if the onions are minced so finely as to be invisible).

Black Bean Burgers
1 sm onion, diced
1 med red pepper, diced
4 cloves garlic, minced
¼ tsp turmeric
½ tsp cumin
2 tbsp ketchup
1 c. cooked rice (brown, pref.)
1 ½ c. cooked black beans (~19oz can)
1-2 c. breadcrumbs
dash Tabasco
Cook onions, red pepper and garlic in non-stick pan sprayed lightly with oil, approximately 8 minutes.
Mix ingredients in a large bowl. Process in batches in food processor on “pulse” setting. Do not over process or mixture will be too soggy.
Mix processed mixture with breadcrumbs (until desired “burger” consistency, somewhat drier than hamburgers) and Tabasco. Form into patties. Cook 3-5 minutes each side on medium heat in a non-stick pan. Serve with favorite burger toppings on a whole-grain bun (mushrooms and cheddar are good!)
*Black bean patties freeze well - single layer on parchment paper, then when frozen, cut parchment and stack burgers with parchment squares in between.

Easy Quiche Lorraine
Ingredients
¾ c flour
½ tsp salt
½ tsp dry mustard
½ c grated cheese (sharp cheddar or other – chevre is good)
¼ c melted margarine
½ c thinly sliced onion
½ c cubed ham or bacon
½ c grated cheddar
2 eggs
1 c milk
dash each salt & pepper
optional veggies (gr. onion, red pepper)
Method
Mix first 3 ingredients, add cheese, then margarine. Mix thoroughly and pack into a 10”/1L pie plate.
Spread onion, ham & cheese evenly in crust.
Beat eggs and add milk. Pour over cheese. Sprinkle with s&p.
Bake at 350F/180C for approximately 1hr.
Notes: we also like to replace the ham with tomatoes and use chevre instead of cheddar… very yummy!  So many possibilities…
